The Irpinia pasta factory lies in the shadow of the Picentini Mountains, an uncontaminated natural environment in Irpinia. It is part of the tradition of Neapolitan pasta makers, and it traces the classic methods of pasta making by preserving the Irpinia custom. The love for this land and its traditions brings into being a genuine homemade pasta, which is produced with 100% Italian ingredients: durum wheat semolina, water and the pasta-making knowledge typical of Irpinia. This factory produces high-quality dry pasta exclusively in special and typical regional types by using local raw materials. The tradition of craftsmanship processes meets the modernity of the new plant, which uses innovative machines for kneading, pressing, crushing and drawing.
THE INNOVATIVE PROCESS
Pastificio Graziano has filed a patent application for silver and platinum drawing at the Ministry of Economic Development in September 2017, after the University of Salerno has certified that the pasta extruded through silver and platinum has characteristics and sensory properties. The Pastificio Graziano company has outlined a procedure to guarantee the production chain by making sure to buy only durum wheat semolina from Italy, analyzing every batch that enters production excluding the presence of pesticides (glyphosate) and heavy metals, this work can be done on every single package of pasta produced by means of QR code that follows all the production processes. The products have optimal cooking temperatures lower than the classic drawing of the order 2/3 min preserving a protein content of about 13%.
The products have lower cooking times, better absorption hydration, excellent protein content.
